Best Ever Strawberry Pie

Mom makes this delicious pie every year as soon as she can buy flats of freshly picked strawberries!

Gwen Ash’s Fresh Strawberry Pie

Crust:

1 cup Bisquick
1/4 cup soft butter (I use vegan)

Place in 8” pie plate, stir together
Add 3 Tablespoons boiling water, stir to mix, pat into crust (it gets really soupy and strange at this point, but don’t worry, it will turn out great!)
Bake 450˚ 8-10 minutes

Sauce:

1 cup sliced strawberries
3/4 cup water

Boil for 3 minutes, remove from heat

Mix together:
1 cup sugar (I use MUCH less - like half, but I don’t like a lot of sweet)
1/3 cup water
3 Tablespoons cornstarch

Mix sugar mixture with sauce, return to heat and boil for 1 minute
Remove from heat and cool to room temperature
Add 2 Tablespoons lemon juice

Assemble:

Layer 2 pounds whole strawberries (with stems removed) on crust
Spoon on sauce to cover (I always have lots of sauce left over and love to mix it in with yogurt, or eat on top of ice cream)
